Each box contains enough Chickpeas & Potatoes Spice and Garnish Spice to make this curry 4 times over.
To make a curry for 2 people the following additional ingredients are required:
- Two medium potatoes
- Two medium onions
- A tin of chickpeas (400g approx)
- 1/4 tin of tomatoes or 2 fresh tomatoes
*Optional*
- Fresh Coriander
- Garlic
- Ginger
Step 1
Blend or finely chop 2-3 onions (blended onions produce a smoother curry) and fry them in approximately 3-4 table spoons of oil. This should take approximately 7 minutes. If the onions start to stick you can add a little water to prevent.
Step 2
Now add a table spoon of the Chickpeas an Potato Mix to the onions and fry for a further 3 minutes. * Optional At this point you can add 2 cloves of crushed garlic and a small amount of fresh ginger if you wish.
Step 3
Now add two peeled and cubed potatoes (you can use a tin of potatoes) and 1 tin of Chickpeas to the pan, and cook on full heat for approximately 5 minutes. If the potatoes start to stick add a little water. Basically you want to fry the potatoes, and listen to the sizzle!
Step 4
Now add one cup of water. Bring to boil, and then turn down heat and simmer for 30 minutes. Basically make sure the potatoes/peas are cooked, also at this point you can alter the consistency of the dish, you can either add more water or further reduce the sauce to thicken it up.
Step 5
Finally add salt to taste and a tea spoon of the 'Garnish mix' to the curry.
Step 6
Serve hot with a sprinkling of coriander.
